Milk and Bone Health

This is one of the most common topics being talked about among nutrition experts.  There are many different discussions that we could have about milk, but for this post, I am sticking to the relationship between pasteurized milk and the health of our bones. The American people have been told for so long that milk is the best source of calcium, and that you have to have lots of calcium to maintain strong bones.  I have actually come in contact with quite a few people who truly believe that milk is the ONLY source of calcium, but of course, this is NOT true.  Here is a list of foods that contain calcium. Cilantro-Lime Brown Rice

This is a super easy brown rice recipe that tastes wonderful on its own, or can be added to quesadillas, burritos and tacos.  This is another recipe that I frequently double so it can be used for multiple meals throughout the week. Cilantro-Lime Brown Rice Ingredients: 2 tbsp olive oil 2 cups brown rice 3 1/2 - 4 cups water Zest and juice of 1-2 limes 1 tsp sea salt 1/2 cup chopped cilantro Recipe: In a large pot, heat oil over medium heat.  Add rice and stir to coat.  Let the rice brown in the oil for about 2 minutes, but do not let it burn.  Add in water, lime zest, lime juice and salt.  Bring to a boil, reduce heat, cover and simmer…

Roasted Vegetables

At our house, we roast a side of vegetables at least twice a week.  The crunchy caramelization on the outside with the tender inside, is so delicious.  And roasting is, by far, one of the easiest ways to prepare vegetables.  You can eat these veggies along side chicken or fish, you can toss them into some brown rice pasta with a little olive oil, or you can add them to some leafy greens for a delicious salad.  Mmmm! I also highly recommend roasting vegetables for those individuals who might be new to healthy eating.  Roasted vegetables are much sweeter and more palatable for taste buds that are new to healthy eating.
