It’s summer in Texas and that puts me in the mood for a refreshing salad with mixed greens and lots of fresh, sweet and juicy berries. The funny thing about this is that my mom has always loved berries in her salad and I never understood why. I couldn’t imagine that sweet berries would taste good in a pile of greens. As I get older, I find that my mother was right about so many things, (she would be happy to read that, I’m sure). So, in time, I have discovered that this is one of my all-time favorite salads, especially in the warmer months. And, it couldn’t be easier to throw together for a quick breakfast or lunch, or to place along-side any dinner.
You can use any type of green for your salad, but the darker the better (note: iceberg lettuce is NOT a green), and I suggest a mix for the diverse nutritional value. Your leafy greens are a great source of vitamins A, C and K, calcium, folate and potassium. The same goes for berries. Try a good mix and load up on vitamin C and antioxidants. Of course, making your own vinaigrette is usually best, but I like to keep things as simple as possible. My favorite store bought dressing is Bragg Healthy Vinaigrette. Unlike most pre made dressings, this vinaigrette doesn’t have any “nasties” and is made with organic apple cider vinegar and organic extra virgin olive oil, both having incredible health benefits of their own. As a matter of fact, there aren’t any ingredients in this salad that don’t carry a pretty great nutritional profile. And, it is super duper delicious!
Mixed Greens & Berry Salad
organic mixed greens
organic mixed berries
sunflower seeds (you can also try pecans, walnuts, almonds, etc.)
Pile a big bunch of leafy greens in a large bowl. Top with mixed berries, nuts and vinaigrette.
Tastes best when eaten in the sun!
